Ingredients

  • 1 cup Swerve Zero calorie sweetener any zero calorie sweetener should work
  • 1/4 cup plain Greek yogurt fat-free
  • 2 apples, peeled and diced *see notes
  • 1/2 tbsp cinnamon
  • 1/4 tsp nutmeg optional
  • 1/4 tsp ginger optional
  • 1 tsp baking soda
  • 1 cup whole wheat flour

Instructions

  • Preheat oven to 350 degrees and spray 9 inch cake pan with cooking spray.
  • In a large bowl, combine egg, sugar, spices, and yogurt. Then stir in the apples till thoroughly incorporated.
  • Add baking soda and flour to the bowl using a fork to combine.
  • Add to prepared baking pan and bake 30-35 minutes, until tooth pick comes out clean and sides and top of cake are a lovely golden brown. This cake is very moist so do not be surprised if the texture and spring of the cake is closer to a bread.

Notes

*I used Gala apples since I had them at home but traditionally Granny smiths are often used in apple treats for a more tart flavor.
