I always like breaking up the week with at least one meal that offers a different flavor profile then normal. I often go towards meals with a little spice or fresh savory herb inspired so this meal with its sweetness from the honey and tartness of the lemon is addition to your weeknight meals. It is so easy and with only one pan it makes a clean up a breeze.
Low Calorie Sweet Lemon Chicken with Asparagus
Easy and healthy sheet pan dinner packed with flavor and perfect for a busy weeknight.
Ingredients
- 4 boneless chicken breasts about 1 lb together
- 1/2 whole lemon sliced into wedges
- 2 bunches asparagus remove ends
- aluminum foil
Sauce
- 1 tbsp low sodium soy sauce
- 1/4 cup lemon juice the juice from about 2 lemons
- 1/4 cup honey
- 2 tbsp parsley
- 2 tsp garlic powder
- 2 tsp onion powder
Instructions
- Preheat oven to 400 degrees.
- Place uncooked chicken breast on baking sheet that has been lined with parchment paper.
- In medium size bowl, mix all sauce ingredients. Spoon 3/4 of the mixture over chicken ensuring that the chickens are evenly slathered. Add the the lemon wedges on top.
- Cover chicken with aluminum foil and bake for 20 minutes.
- Remove from oven tray from oven, then remove and discard foil.
- Add asparagus around the parameter of the chicken and drizzle with the remaining sauce.
- Bake for an addition 8-10 minutes until the asparagus is at the desired tenderness and the internal temperature of chicken is at 165 degrees.
- Remove from oven and serve.
