Skinny Blueberry Muffins

Honestly, is there anything like the smell of fresh blueberry muffins mixing with the smell of coffee to set the stage for a perfect morning.

This recipe is one of favorites and with a small batch size you do not have to commit to eating them for a week so you have room on the counter to bake more goodies. However, they also can be frozen and reheated when you want.

Skinny Blueberry Muffins

Ingredients
  

  • 1 cup old fashioned oats
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 egg whites
  • 1/2 cup applesauce unsweetened
  • 1/2 cup Swerve zero calorie sweetener any zero calorie sweetener should work
  • 1/2 cup water
  • 1 cup fresh blueberries

Instructions
 

  • Preheat oven to 350 degrees and prepare a muffin tin with cooking spray.
  • In a large bowl, combine oats, flour, baking soda, cinnamon, and salt.
  • In a separate bowl, add sweetener, egg whites, water, and applesauce. Stir until combined.
  • Add the wet mixture to the dry and stir until combined.
  • Add the blueberries and slowly stir until evenly distributed.
  • Evenly separate into muffin tin (start with 1 heaping tablespoon of batter per muffin then equally separate the remaining. Bake for 20-25 minutes until toothpick comes out clean and the tops have browned.

Notes

These muffins have a tight texture and will not rise as high as other muffins.
