1/2cup Swerve zero calorie sweetenerany zero calorie sweetener should work
1/2 cupwater
1 cupfresh blueberries
Instructions
Preheat oven to 350 degrees and prepare a muffin tin with cooking spray.
In a large bowl, combine oats, flour, baking soda, cinnamon, and salt.
In a separate bowl, add sweetener, egg whites, water, and applesauce. Stir until combined.
Add the wet mixture to the dry and stir until combined.
Add the blueberries and slowly stir until evenly distributed.
Evenly separate into muffin tin (start with 1 heaping tablespoon of batter per muffin then equally separate the remaining. Bake for 20-25 minutes until toothpick comes out clean and the tops have browned.
Notes
These muffins have a tight texture and will not rise as high as other muffins.
